My Fave Recipe


Even if you are not a vegetarian, if you like mushrooms, this is a good one!

Portobello Mushroom Burger

2 good sized Portobello mushrooms

1 cup shredded Jarlsberg cheese

4 green onions chopped

2 eggs

1 cup Panko crumbs or Matzo meal (I prefer the Matzo meal)

Salt & Pepper to taste

Handful of chopped cilantro (optional)

Chop the Portobello mushrooms and place in a medium bowl. Add the cheese, green onions eggs, cilantro and ½ cup Panko/Matzo meal. Mix with you hand or a spoon. Check the consistency if it’s too wet, add more of the Panko/Matzo meal.  You should be able to form balls of the mixture and it will hold together loosely.

Make palm-sized balls and flatten them to about ¾ of an inch.

Heat a skillet on med-high. Add your favorite cooking oil. I use olive oil. Place the burgers in the skillet and cook until light brown on each side.

Place on paper towel when finished to blot oil.
